CORNED BEEF REGULATIONS

Title .
Interpretation.

"hermetically sealed container" means a container which is
completely sealed, rigid and impermeable and which is made of any
appropriate material which is suitable for corned beef.
Applicability and 
description.
3. (1) These Regulations shall apply to products designated
as "corned beef".
(2) Corned beef shall consist of chopped, cured, boneless
carcase meat which has been derived from animals of the bovine
species and may include head meat, heart meat and skirt meat.
(3) Corned beef shall be prepared from coarsely cut beef which
has been precooked, or of precooked beef to which a maximum of
5% raw beef has been added, provided that in either case the meat
shall be cured, before or after filling into the container.
Composition.
ingredients consisting of salt (sodium chloride) and sodium or
potassium nitrite.
(2) Corned beef may also contain sucrose, invert sugar,
dextrose (glucose), lactose, maltose, glucose syrup (including corn
syrup).
(3) The total protein content in the final product shall not be
less than 21% m/m.
(4) Corned beef shall conform with the standards laid down in
the Schedule as regards additives.
Quality and 
hygiene.
5. (1) The raw meat from which the product is prepared shall
be free from objectionable odours and flavours.
(2) No meat or meat products shall be accepted by an
establishment where corned beef is prepared or manufactured
unless the animals from which the meat or meat products have been
derived have been subjected to ante mortem and post mortem
inspection and found free from disease at the time of slaughter and
fit for human consumption. Such animals shall not after such
inspection or inspections be or have been exposed to contamination
or processed or handled or subjected to the addition of any harmful
substance which renders them unfit for human consumption.
(3) The meat and meat products referred to in sub-regulation
(2) shall be handled, stored or transported in such establishment in
such a manner that will protect the meat and meat products from
contamination and deterioration.

(4) The final product shall be clean and substantially free from
staining and contamination from the container. The meat shall be
uniformly and thoroughly cured, and the product shall be capable
of being sliced when cooled.
Packaging . 6. (1) Corned beef shall be packaged in hermetically sealed
containers which do not permit contamination and which shall be
clean and show characteristics of sound containers and shall show
evidence of vacuum. The containers shall be heat treated after
sealing to such an extent as to render the product shelf-stable, and
in such a manner that it presents no public health hazard.
(2) When processed containers are cooled in water, the water
shall be of potable quality or suitably treated so as not to constitute
a public health hazard. After processing, the containers shall be
handled in such a manner as to avoid contamination of the product.
Labelling. 7. (1) The label on the container shall designate the nature of
the product as "Corned Beef". Such label shall also show a
declaration as to the complete list of ingredients, in descending
order of proportion and a specific name shall be used for all of the
ingredients.
(2) The net contents shall be declared by weight in metric
units. The name of the manufacturer, packer, distributor, importer,
exporter or vendor of the product shall be declared, as well as the
country of origin of the product. The country in which processing is
performed shall be considered to be the country of origin. Each
container shall be embossed or otherwise permanently marked to
identify the establishment producing the corned beef as well as to
identify the batch number of the lot.

8. (1) No person may import, manufacture, export or sell any
corned beef which does not comply with the requirements of these
Regulations or which has not been produced in accordance with the
provisions of these Regulations or of the Food, Drugs and Drinking
Water Act, or of any regulations made thereunder.

(2) Any corned beef which is allowed to be imported in
accordance with the provisions of sub-regulation (1) shall, on
importation, be accompanied by the document or documents as
referred to in regulation 9 of the Canned Food Regulations.
