Abstract | This dissertation outlines a brief introduction to the types of street vending foods sold in the Maltese islands. Each activity has been categorised on the type of food being sold, both in the streets and open air markets. The procedures to obtain the relevant licence to operate as a street food vendor have been outlined vis-a-vis the role of the environmental health officer to assess basic food hygiene standards. Maltese legislation pertaining to food safety has been reviewed, with particular importance to the regulations street food vendors have to comply with. Guidelines have been formulated on the good hygiene practise of street food vending and for setting priorities for food safety interventions. A case study showed that fish hawkers selling fresh fish at the M'Xlokk open air market lacked proper awareness on the use of ice together with the lack of basic infrastructure available to maintain food safety standards. A discussion follows and recommendations are laid down in view of the local situation with particular consideration to regulation, vending unit design, inspection, training and consumer awareness. A food safety check list for street foods vendors has been formulated. |
